WORD for Wednesday..RECIPE

My friend Jean brought a large bag of summer squash the other day, and I
used some of it to make this. My husband isn't fond of squash, but loves this squash casserole.

AUNT FANNIE'S SQUASH CASSEROLE

This recipe is from a restaurant that used to be in Smyrna, GA, called 'Aunt Fannie's Cabin'. Aunt Fannie was a freed slave of an old Georgia family who remained with the family until her death. The menu at the Cabin represented many of the dishes that Aunt Fannie prepared for the family.

INGREDIENTS

3# summer squash
1/2 c. onions, chopped
1/2 c. butter, melted
2 eggs, beaten
1/2 c. saltine crumbs, crushed
sugar, to taste
1 tsp. salt
1/2 tsp. black pepper
extra saltine crumbs (I use about 1/2 c.)

Wash squash, cut in half lengthwise, then in 1/4" slices. Combine with chopped onion and cook in water to barely cover, until both are tender. Drain thoroughly, pressing out excess water with back of spoon. Mash squash and onion with potato masher.

Mix with half the butter, the cracker crumbs, eggs, sugar to taste, salt and pepper. Pour into a greased casserole dish.

Pour remaining butter on top and sprinkle with additional cracker crumbs.
Bake at 375 degrees for 45-60 min., or until top is golden brown and bubbly.

Makes 6 servings

THE GERIATRIC ALPHABET........

A is for apple, and B is for boat,
That used to be right, but now it won't float!
Age before beauty is what we once said,
But let's be a bit more realistic instead.

A's for arthritis;
B's the bad back,
C's for the chest pains,
Perhaps car-di-ac?

D is for dental decay and decline,
E is for eyesight, can't read that top line!
F is for fissures and fluid retention,
G is for gas which I'd rather not mention.

H is high blood pressure--I'd rather it low;
I is for incisions with scars you can show.
J is for joints, out of socket, won't mend,

Y is another year I'm left here behind,

I've survived all the symptoms, my body's deployed,
And I'm keeping twenty doctors fully employed!!

THANKFUL Thursday

Today, I'm thankful that some people have more time than I do to come up with clever stuff.


Everything I need to know about life, I learned from Noah's Ark...
1) Don't miss the boat.

2) Remember that we are all in the same boat.

3) Plan ahead. It wasn't raining when Noah built the Ark.

4) Stay fit. When you're 600 years old, someone may ask you to do something really big.

5) Don't listen to critics; just get on with the job that needs to be done.

6) Build your future on high ground.

7) For safety's sake, travel in pairs.

8) Speed isn't always an advantage. The snails were on board with the cheetahs.

9) When you're stressed, float for awhile.

10) Remember, the ark was built by amateurs; the Titanic by professionals.

11) No matter the storm, when you are with God, there's always a rainbow waiting.

FUNNY Friday

A minister was preoccupied with thoughts of how he was going to ask the congregation to come up with additional funds for repairs to the church building. He was a little annoyed to realize that today, of all Sundays, the regular organist was out sick and a substitute had been brought in at the last minute.
The substitute wanted to know what to play. "Here's a copy of the order of service", he said, "but you'll have to come up with something to play after I make the announcement about the finances."
At the conclusion of the service, the minister paused and said, "Brothers and Sisters, we are in great difficulty. The roof repairs are going to cost twice as much as we had expected, and we need an additional $4,000. Any of you who can pledge $100 or more, please stand up."
At that moment, the substitute organist began playing 'The Star Spangled Banner'.....

And that's how the substitute became the regular organist!

I'm thankful to have my grandson, Justin, visiting with us for three weeks.
He's ten years old, and alot of fun! My only complaint is that he's beaten me at every single game we've played. Hmmm....wonder how that could happen???

He's such a great kid. He loves life, and is in a good mood almost all of the time
(except when the video game he's playing doesn't go his way).
He and his grandad went gem mining yesterday and came home with a big bag of rocks and 'gems'. Today, he'll get to fish down at our pond, and maybe later, get in some archery practice.
(Neighbors: keep your pets at home!) Ha!
