CHINESE CHICKEN SALAD



Chinese Chicken Salad
1# grilled Chicken Breast strips
1 pkg. Angel Hair Slaw mix
1 pkg. Ramen noodles
3 oz. pkg. Sliced Almonds

*Crush uncooked ramen noodles.
*Toast in oven along with the sliced almonds
until light brown. Set aside to cool.
*Combine grilled chicken breast strips & coleslaw.



Oil & Vinegar Dressing
1/3 to 1/2 c. Sugar
1/3 to 1/2 c. Cooking oil
1 1/2 Tbsp. Soy Sauce
2 Tbsp. Red Wine Vinegar


*Mix dressing & shake in a shaker bottle.
*Pour onto salad just before serving.
*Sprinkle toasted noodle/almond mixture on top.

I doubled the recipe to serve 6.

This sounds delicious and doesn't have as much sodium in it as I had expected :o)

What a great photo of you and your *craft gals*!!

Do you each work on your *own* thing or do you try to complete similar things each time you meet?

Thanks, Dallas! It's a very healthy salad, & the sugas amount can be reduced, if desired.

Each gal in the crafts group works on her own project. Sometimes, we just end up chatting instead of crafting. Ha!
Yesterday, Linda (who was here visiting from S. Fla.) did her first mosaic...a small tray...and it turned out great!

Try using Sesame Oil instead of cooking oil. It adds a great flavor and aroma. I also toast sesame seeds with the almonds and noodles.

That sounds good! I'll have to try it! Since I almost never use cooking oil anymore, this healthy stuff was all I had on hand, but it tasted great in the dressing. Hadn't thought of adding toasted sesame seeds, but will try that, too.
See what you started when you gave me this recipe years ago! It's still one of my favorite things to fix (& to EAT!).
